“A twist on a cheese cracker and a shortbread all in one. We mix parmesan cheese with rosemary and black pepper and then fold this mixture into a flour and butter to make a flaky, rich, cookie with a ton of cheesiness and bright herb flavor. This is topped with toasted pine nuts and an olive oil foam for a little wow factor.”

herb roasted baby vegetables, walnut and chive vinaigrette
“A very simple dish done in an extremely colorful way. Baby carrots in white, purple, yellow and orange along with purple cauliflower and romanesco have been roasted simply with some thyme, oil and salt and pepper. Served with vinaigrette of walnut oil, white wine vinegar, toasted walnuts and chives.”

“This is the best way to do a turkey, the legs have been seasoned with orange zest, cloves, peppercorn and cardamom, then cooked in duck fat for 12 hours to make for the most tender meat possible. The breasts have been rubbed with butter and sage, seasoned with salt and pepper and roasted slowly for a nice crisp skin and juicy meat. Served with traditional sides.”
